Black rice is a very nutrient and healthy variant of rice. Here is a fresh and tasty recipe to enjoy it even more!
INGREDIENTS (for 2 sharing)
- 200 gr black rice
- 1 large chicken breasts
- 1 red bell pepper
- 100 gr cherry tomatoes
- 1 lime
- 1/2 avocado
- a sprig of coriander
- 2 spoons olive oil
Firstly, you need to rinse thoroughly the black rice, and to leave it to soak in water for a while. Rinse it a second time if needed. For cooking, it needs to be boiled twice with fresh water, for 20′-30′ ca. each time. Add salt at taste just during the second boil, and then let the rice cool down.
On a separate pan gently stir fry the diced chicken breast and the bell pepper cut in thin slices with the olive oil until cooked (might need to add a bit of water to aid cooking).
When the rice has cooled down, dispose half of it as bedding on plates, and add the rest of the ingredients to compose the salad: the chicken and peppers, the tomatoes cut in half, chunks of the avocado, and scatter with the coriander coarsely chopped. Then, add the rest of the rice on top.
Finish by drizzling with the juice of half a lime for each plate, from which you have cut a slice to decorate 🙂
