Saucy and tasty, this dish will give some sicilian taste to your normal chicken
- 250gr chicken breast
- 10 cherry tomatoes (S. Marzano)
- 12 capers
- 1 shallot
- 6 black olives
- 2 garlic cloves
- olive oil
- oregano (optionally)
On a fry pan, put some olive oil and let gently fry the sliced shallot, the peeled garlic cloves, the capers, and the pitted black olives. When the shallot is golden, put all on a side of the pan, and put the cherry tomatoes, halved, lied down on the cut side (this will sealed the tomatoes, that won’t melt immediately).
Once the tomatoes are golden on the flat side, turn them around and add the chicken breast, cut in ½cm slices. When the chicken is cooked on one side, turn it around, season it, and stir all ingredients together. Let cook until completion, mixing all every now and then, so to get the tomatoes to slightly melt and make a little sauce.
