Sausages and peppers in casserole Recipe

  • 300gr Merguez (beef sausages)
  • 2 bell peppers
  • 3 carrots
  • 4 mushrooms (Champignon)
  • 4 garlic cloves
  • ½ onion
  • ½ lt tomato passata
  • 50ml water
  • 10 cherry tomatoes
  • salt/pepper

Slowly warm up a casserole (or a tajine, or a cocotte), add some olive oil and gently fry the peeled garlic cloves and the chopped onion. Then quickly roast the merguez chopped in 1-2cm pieces. Add the sliced carrots and mushrooms and stir-fry for 5min. Then add the bell peppers cut in 1cm-thick slices, the tomato passata together with the water and the cherry tomatoes cut in half, salt and pepper at will and let boil at low flame until the sauce has reduced and thickened (45′ ca.). Enjoy with bread or wraps.
