Pasta with courgettes Recipe

A summery pasta with fresh seasonal veggy: courgettes and their flowers


INGREDIENTS (for 2 servings)
  • 180gr pasta (long shape, like maccheroni)
  • 4 small courgettes
  • 4  courgette flowers
  • half a small onion
  • 2 spoons of olive oil
  • OPTIONAL: few saffron stigams (or a small bag of saffron powder)

Chop the onion very finely, and gently fry it on a pan with the olive oil. Add the courgettes diced or sliced and let go until cooked. Meanwhile, boil the pasta (10 min with salted boiling water), and if needed take a spoon of water and add it to the courgettes. When the courgettes are cooked, add the courgette flowers finely chopped, turn the stowe off, and add the saffron. When the pasta is cooked, strain it and add it to the courgettes+flowers+saffron, and stir.
