Polenta with Munster cheese recipe

Here is an innovative recipe made with polenta, combined with a strong-tasting cheese that can be found only in Alsace (France): Munster Cheese.

  • 1 cup cornmeal
  • 4 glasses of water
  • 1/2 teaspoon of salt
  • butter 40g
  • Munster cheese

Pour 4 glasses of water in a sauce pan and bring water to a boil over high heat. Add the salt and the cornmeal very slowly and stir it with a wooden spoon. Keep stirring for 2-3 minutes, until the mixture gets smooth and thick. Turn heat to low and cook for at least 45′. Remember to stir it every 5-10′. Add the butter a few minutes before turning off the heat.

Pour the polenta onto a pan, spread it to a thickness of 5cm and let it cool to room temperature. When it will be solid, slice it and put each slice in the toaster. Toast it until it becomes crusty, then add a thick slice of Munster cheese on each slice and let the cheese melt.
