Mediterranean Salmon Recipe

Today we share with you a light and easy-to-prepare recipe that helps you to detox from winter.

All you need are a few ingredients and a fresh fillet of salmon!

Mediterranean salmon

INGREDIENTS (for 2):
  • 2 salmon fillets
  • 6 cherry tomatoes
  • 6 olives (green or black, or both, better if seasoned with herbs)
  • half a lemon
  • a pinch of salt and pepper
  • a spoon of olive oil
  • mediterranean herbs: oregan/thime/rosemary
  • 2 tin foils (long enough to completely wrap the fillets)
PREPARATION:

Half the cherry tomatoes and slice the olives. Wet the tin foils with a bit of olive oil and lay one salmon fillet each, from the skin side. Add salt and pepper at taste, and put the slices of olives and the halved cherry tomatoes on top of the fillets, half each. Drizzle with olive oil, squeeze some lemon juice and add the herbs on top. Finally, wrap each fillet individually, paying attention to close it well to allow the salmon to cook well without drying out.

Cook in a preheated oven at 180°C for 20-25′ and enjoy!
