With the good season fast approaching, here is a fresh and summery chicken recipe
- 500gr chicken breast
- 2 thick-skinned lemons
- a sprig of fresh rosemary
- half a dozen wood skewers
Chop the chicken breast in cubes of 2-3 cm, and put them in a dish. Add a pinch of salt and pepper and the juice of half a lemon on top, and leave to marinate for 15′. Then, slice the second lemon (½cm thick), halving each slice. Finally, prepare the skewers: alternate a cube of chicken with a bunch of rosemary or half a slice of lemon, putting the lemon both at the beginning and at the end of each skewer.
You can either grill them on the barbecue or cook them on a pan (with a bit of olive oil for 20min ca.). In each case, squeeze the remaining half of lemon on top while cooking, for an extra lemony/summery taste!
