Radicchio with bacon recipe

A seasonal side dish that is worth a second course

Radicchio al Forno forchettavagabonda ricette

INGREDIENTS:
  • radicchio rosso di Treviso “tardivo”
  • bacon in thin slices (4 slices per each radicchio, Piacentina for an optimal result)
  • extra-virgin olive oil, two table spoons
  • a grill pan
  • (optional) Munster or Taleggio, 5 thick slices per oven tray
PREPARATION:
  • cut each radicchio in 4 wedges
  • grill the radicchio wedgies on the grill pan until cooked (it is perfectly normal that the tips, softer than ribs, get slightly burnt)
  • wrap each wedge with a slice of bacon
  • arrange the wrapped wedges in s well-oiled oven tray, and drizzle in the remaining olive oil

Optional: cover everything with the slices of Munster cheese, a smoky strong tasting cheese from eastern France, or Taleggio, yet a strong tasting cheese from Lombardy, Italy.

  • bake in preheated oven at 180° for 10′, or until the cheese is fully melted
