Stuffed artichokes recipe

This year’s artichokes season is getting to an end and we decided to celebrate it preparing some oven-baked artichokes, an ideal second dish.

  • 3 large whole globe artichokes

for the stuffing:

  • 500g beef minced
  • 100g ham diced
  • 50g bacon (pancetta) diced
  • 1 egg
  • 100g breadcrumbs
  • 80g Parmigiano shredded
  • 4 garlic cloves, 1 small onion, parsley chopped
  • wash and clean the artichokes, cut the stems away and set the artichokes aside
  • to prepare the stuffing: chop the ham, the bacon, the garlic, and the onion (use a mixer for better results). Merge the minced meat and knead
  • add the breadcrumbs, the egg, the parsley, and the Parmigiano, and knead until a homogeneous dough is obtained
  • for each artichoke, gently open the leaves and stuff them with the dough, carefully not to break them
  • oil a tray and bake in a preheated oven at 160° until the artichokes are tender
  • if needed, and for a bit of extra pleasure, add a glass of white wine to help the cooking and to avoid the artichokes to stick to the tray
